I don’t know about y’all but after a full day the last thing I want to do is cook a lavish dinner. So instead of serving that pizza delivery or take-out, give this recipe a try.

Steve is finally home! Three weeks away as he literally traveled around the world.  He left Phoenix, AZ and flew to Hong Kong, then on to Singapore from there he went to India, on to London and back to Phoenix.  It was a long journey which was filled with lots of new experiences as well as hardship on his body.  Have y’all ever noticed how traveling wipes you out? That when you get home you need a vacation from your vacation? Well that’s exactly what happened to my husband.  During his time aboard he experienced an elevated heart, dizziness, swelling of his feet, tightness in his legs and gained 20 pounds.

Now I don’t know about y’all buy hearing all of this while he is so far away from me freaked me out! And I don’t know about your husbands but ,one doesn’t take care of himself….I constantly have to remind him to do things. I was honestly afraid he might not make it home.  Thank god he did! Saturday night he landed home safe and sound as far as I could tell.  By Monday though the swelling and tightness in his legs were still present so off to the doctor I made him go.  They did an ultrasound on his legs looking for blood clots because well 23 hours on a plane can cause that…but thank goodness no clots were found. So, we have more tests to do and results to wait for.  Talk about scary stuff.

Ingredients

  • 1 bag instant brown rice cooked
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon fresh ground ginger
  • 3 cloves garlic minced
  • 1 pound lean ground beef
  • 1/3 cup brown sugar
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes or more if you like it spicy
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 green onions thinly sliced

Instructions

  1. Heat the oil in a large pan.
  2. Cook the garlic and ginger for about 1 minute, stirring constantly.
  3. Add the ground beef and brown completely; drain the fat.
  4. In a small bowl, combine brown sugar, soy sauce, sesame oil, red pepper flakes, salt and pepper.
  5. Add the soy sauce mixture to the ground beef and let cook for 3-5 minutes to allow the flavors to set and sauce to thicken.
  6. Serve beef over rice, top with green onion.
