Hell yeah! Damn near everyday right? Right!

No-Cook Dinner

Well, try this easy antipasto salad for a quick weeknight dinner. Start to finish it takes just a few minutes—including the simple homemade Italian dressing.

Y’all this is one of my favorite no-cook (which means easy and no-hassle) weeknight meals. All you have to do is a little slicing and a quick shake of dressing ingredients, toss it all together and viola, dinner is ready!

So, we have had a massive snow storm last week.  Record breaking numbers of 40″ in a 24-hour period of time.  A week later and it’s 50 degrees outside, the snow is melting and as much as I hate to say it, it feels hot!  The thought of heating the house up for dinner is not an option.  Then throw in that I am trying to blog, cook, photograph, complete social media, work a full time job AND complete two of my own classes and well, lets just say my patience is running thin and I need a break!  Bring on the gray hairs!

Thank goodness I have meals like this in my arsenal otherwise we would all be eating cereal at least 4 out of the 7 nights a week!  Simple, cool, refreshing AND quick! Sign me up!

Ingredients

Italian Vinaigrette

  • 1 cup olive oil
  • 1/3 cup red or white wine vinegar
  • 1 tablespoon Italian seasoning
  • 1 tablespoon Dijon mustard
  • 2 teaspoon sugar
  • 1 tablespoon minced garlic
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Salad

  • 1 12 oz jar Quartered marinated artichoke hearts drained
  • 2 oz Asiago Romano & Parmesan cheese blend
  • 1.3 oz Salame Milano sliced into strips
  • 1.3 oz Salame Calabrese sliced into strips
  • 1.3 oz Salame Toscano sliced into strips
  • 8 oz a small bag Of spring medley blend salad mix

Instructions

  1. Place all of the dressing ingredients put in a mason jar or mixer and shake it up really good to mix.
  2. Add all of the salad ingredients to a large bowl and toss to combine.
  3. Serve with dressing and enjoy!
