Wow that’s a mouth full!  I didn’t know what to call this salad and felt it was important to convey ALL of the ingredients.  Anyhow, this Blue Cheese, Apple, Cran-Cherry, Bacon and Marinated Chicken Balsamic Salad is absolutely one of my favorites and I make sure to have it frequently throughout the summer!

Who doesn’t love a huge salad for dinner?

I mean seriously, don’t have a lot of time for cooking? Not in the mood for cooking but still prefer homemade food? Or how about it’s just too damn hot to be in the kitchen? This salad is perfect for weekdays when you are constantly tired after work.

Summer is officially in full swing and school starting back up is right around the corner; with that comes lots of salads and yummy goodness!  Fresh spring salad mix, blue cheese, apples, cran-cherries, bacon bits and marinated chicken topped with an amazing balsamic vinaigrette dressing.  This is sure to become a family favorite!

Blue Cheese, Apple, Chicken, Cran-Cherry, Bacon & Balsamic Salad

Ingredients

  • 1 lb chicken tenders
  • ½ cup Italian dressing
  • 1 tsp lime juice
  • 1 ½ tsp honey or agave nectar
  • 2 bags spring salad mix
  • 1 cup real bacon bits
  • 1 cup dried cran-cherries
  • 1 large apple chopped
  • 2 cups crumbled blue cheese
  • ½ cup olive oil
  • 1/3 cup sugar
  • 3 Tbsp balsamic vinegar
  • 1 tsp mustard
  • ¼ tsp of coarse ground pepper

Instructions

  1. Mix the Italian dressing, lime juice and honey/agave together.
  2. Place marinade in a large zip lock bag with the chicken and make sure all chicken is coated.
  3. Place in fridge for 1 hour.
  4. In a skillet over medium heat, sprayed with non-stick spray, brown chicken on all sides until cooked through, about 8 minutes total.
  5. Clean spring salad mix and place in large bowl.
  6. Top with bacon bits, cran-cherries, apple bits and blue cheese; toss to evenly distribute.
  7. Make dressing: Whisk olive oil, sugar, balsamic vinegar, mustard and pepper together; whisk until combined, about 2 minutes by hand.
  8. Place salad mix onto plates.
  9. Place chicken on top of salad mix and drizzle dressing over top.
  10. Enjoy!
