Chicken Salad Sandwich

This Chicken Salad Sandwich has shredded chicken, sliced almonds, crunchy apples and juicy grapes; perfectly served on bread of your choice or on top of a fresh bed of greens makes a quick, easy and delicious lunch or light dinner.

What’s in your lunch box?

As you all probably know I monitor my husband’s eating habits. We meal plan and prep his lunches and over thepast couple of weeks my husband has been talking about having something different for him to eat at work that he can grab during the day. He is one busy man and sometimes lunch just doesn’t happen. He’ll work right through it or grab a spoonful of peanut butter to hold him over.


I’m not okay with it! He’s 6’ and NEEDS to have food in his belly!

This recipe makes 6 cups of chicken salad which means there’s enough for both of us!  As long as you have crackers, lettuce cups or bread You’re all set. And to be honest, we could just eat this plain without those other “carrier” items. It’s just as good plain! I know from experience.

It’s a nice light and filling option that makes a great lunch or dinner. I just love the crunch of the apples and celery, the sweetness of the grapes and the flavor of the dressing, a perfect combination; at least in my opinion! Y’all should try it and let me know what y’all think!

Chicken Salad Sandwich

Ingredients

  • 3-4 Cups Cooked chicken
  • 1 Cup Seedless black grapes Sliced in half
  • 1 cup almonds thinly sliced
  • 1 celery stalk sliced
  • ½ cup chopped apple
  • 2 Tbsp fresh dill chopped
  • 1 Tbsp fresh parsley chopped
  • 1 cup mayonnaise
  • 1 Tbsp lemon juice
  • 1 Tbsp Dijon mustard
  • 1 tsp House Seasoning

Instructions

  1. In a large bowl, mix together the chicken, grapes, almonds, celery, & apple.
  2. In a small bowl, mix together the mayonnaise, lemon, mustard, seasoning, dill & parsley.
  3. Add the mayonnaise mixture to the chicken mixture, and gently stir until evenly combined.
  4. Refrigerate for at least an hour.
  5. Serve on bread of your choice with green leaf lettuce or on a bed of lettuce with sliced tomatoes and other toppings.
