We are just four (4), FOUR days away from Christmas Day! Don’t Panic! There is still a chance for you to get your holiday bake on!

A classic on any cookie tray is always thumbprint cookies. This Chocolate Cherry Thumbprint Cookie recipe is yet another easy cookie recipe to make with the kids. Using cherry pie filling will give the cookies just enough moisture to make them irresistible!

The dough can be made ahead of time, formed in to balls with the thumbprint. When you are ready to bake them, just place the frozen balls on a parchment-lined cookie sheet, allow to thaw for about 15 minutes and then add the cherry filling.

Ingredients

  • 1/2 Cup Unsalted butter Softened
  • 8 oz Cream cheese Siftened
  • 1 Cup Light brown sugar Packed
  • 1 Egg
  • 1 Teaspoon Almond extract
  • 1/2 Teaspoon Vanilla extract
  • 2 Cups All purpose flour
  • 1/2 Teaspoon Salt
  • 20oz Jar Maraschino Cherries Drained and patted dry
  • 1/2 Cup Chocolate chips

Instructions

  1. Preheat oven to 350 degrees
  2. In a large mixing bowl, cream together the butter, cream cheese and brown sugar.
  3. Add in the egg, almond extract and vanilla extract and continue to mix until well combined.
  4. In a medium-sized bowl, mix the flour and salt together.

  5. Slowly add the flour mixture into the wet ingredients and mix until well combined. Cover the bowl and chill for several hours.
  6. Using a small cookie scoop, scoop 1-inch balls. Place the dough onto the cookie sheet and press a small well into the tops with your thumb.
  7. Drain the maraschino cherries. Gently squeeze each cherry in a paper towel, to make sure it’s not wet. Place one cherry in the well of each cookie. *Note – If the cherries are still wet, there will be red stains around the top of your cookies.
  8. Bake for about 12 minutes and cool completely on a cooling rack.
  9. Place the white chocolate chips into a microwave safe bowl. Microwave for 20 seconds, stir and then microwave 5-7 seconds at a time until the white chocolate is melted. Pour the melted chocolate into a zipper bag, snip one the tip off of one corner. Drizzle the chocolate over each cookie. Let chocolate can set for a few minutes before serving.
