Holy Moly! Fall is coming! This morning we woke up and it was 48°F outside. I actually had to pull out a cardigan this morning. We normally sleep with the windows open and let me tell you – tonight they will be closed. Anyway, I made Creamy Tomato Tortellini Soup for lunch because it is really starting to feel like fall and it just completes the whole vibe if you know what I mean.

I’ve always loved tomato soup – but sometimes you just need a little something extra in it to make it feel like a complete meal.  With this Creamy Tomato Tortellini Soup you have just that – something a little hearty!

It’s delicious and the perfect lunch or dinner…  and ready in less than 20 minutes! I love adding things like fresh croutons, a dash of cream, bacon, and of course, tortellini! It’s great served with grilled cheese sandwiches or a fresh Caesar salad.

Creamy Tomato Tortellini Soup is a delicious creamy tomato soup with cheese tortellini! Quick & easy, making a perfect fall weeknight meatless meal!

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 2 cans condensed tomato soup
  • 2 tablespoons sun dried tomato paste
  • 2 cups half and half
  • 2 cups chicken or vegetable stock
  • 1 teaspoon onion powder
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (9 ounce) package cheese-filled tortellini
  • 1/2 cup Parmesan cheese shredded, for garnish

Instructions

  1. Sauté garlic with olive oil in á large stock pot over medium heat until golden brown.
  2. Be sure to keep an eye on it so it doesn’t burn.
  3. When the garlic is done, add tomato soup, tomatoes, half and half, chicken stock, onion powder, Italian seasoning, salt and pepper.
  4. Bring to á simmer.
  5. Once simmering, drop tortellini into the soup.
  6. Cook according to the package directions.
  7. When tortellini are done, ladle soup into bowls and top with Parmesan cheese.
