Ingredients

  • 1 cup mayonnaise
  • 4 mild or hot Hatch chiles roasted, peeled, and seeded
  • 1 lime juice only
  • 1 bunch cilantro chopped
  • 1 teaspoon minced garlic
  • 1/8 teaspoon cumin
  • 2 chicken breasts cooked and shredded
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a sauce pan boil the chicken for 10-15 minutes (until cooked through). Remove the chicken and shred.
  2. In a large bowl, combine the mayonnaise, Hatch chiles, lime juice, cilantro, garlic and cumin and stir until smooth.
  3. Put the chicken meat into the bowl and mix with the Hatch chile mayonnaise and toss to combine.
  4. Add salt and freshly ground pepper to taste.
  5. Serve chilled.

Recipe Notes

If you have time to let the chicken salad sit in the refrigerator for a few hours before serving, great – the flavors will mingle and intensify.
