Pizza is the Ultimate Finger Food

I don’t know about y’all but me, I love easy finger foods on football Sundays. One of our most recent loves has been Gameday Packer Veggie Pizza. As you know my household is full of Green Bay Packer fans. Cheeseheads through and through!  So of course with yesterday being the first official football gameday of the season I had to make some snacky finger foods!  And a pizza made with 5 different cheeses (PACKED with CHEESE, wink, wink, I know I am an idiot) has to be a Packer Pizza!

I don’t know how y’all feel but in my opinion it’s hard to screw up pizza. Now don’t get me wrong, I’ve eaten plenty of mediocre pizza, but I can only remember one truly horrible pizza. The pizza (the place I will not name) we had ordered was a soggy, gooey mess. It  was such a disappointment. Know what I mean? This pizza however, this pizza is totally a recipe worth craving. It’s packed with so many fresh vegetables and delicious, flavorful ingredients that I can forget all about that other pizza!

When Life Throw You A Loop

As some of you may have noticed I have been M.I.A. again for a few weeks now.  So I must say I am so sorry!  My life has been flipped upside down and back, again!  As you know from my last post we sold our house and had to move, that alone is difficult.  Since that last post, my husband flipped his truck which was a huge wake up call of me.  We were down to one car and when you have two people trying to make it to work plus handle getting Emma to and from cheer practice and me getting to my real estate class…it was a challenge, even with my little Toyota Yaris rental car.  The insurance company totaled our truck and as a result we are the new proud owners of a 2018 Toyota Tacoma TRD Off-Road truck. My husband is in love….I think I might have been replaced! Ha ha ha! 

So, needless to say my pantry STILL hasn’t been stocked since we moved.  So, today I set a mission for myself and that was to get to the store and get back into my kitchen!  I must say today was a success!

This recipe will take about 20 minutes total to cook. While the oven is preheating simply prep your veggies that way you can roll out your pizza dough, top and bake for 15-17  minutes longer!

Gameday Packer Veggie Pizza

Ingredients

  • 4 teaspoon extra virgin olive oil
  • 1 Tablespoon minced garlic
  • 1 roll of pizza dough
  • 1 cup chopped cooked spinach
  • 1 cup quartered artichoke hearts
  • 2 Roma tomatoes sliced thin
  • 1/4 of a large red onion sliced
  • 3/4 cup crumbled feta
  • 1 cup Italian four cheese blend

Instructions

  1. In a small saucepan heat the olive oil over medium heat; add minced garlic; simmer for 3 minutes. Set aside to cool.
  2. Preheat the oven to 425°F.
  3. Remove pizza dough from refrigerator.
  4. Unroll the pizza dough onto parchment paper and place on a large baking sheet.
  5. Brush garlic infused olive oil evenly over the entire crust, then top with about 1/3 of the Italian four cheese blend.
  6. Top cheese with artichokes, tomatoes, onions, and spinach.
  7. Sprinkle with feta and remaining cheese.
  8. Bake pizza until crust is well browned, about 15 minutes.
  9. Let cool for a few minutes, then cut into slices or squares.
  10. Enjoy!
