Who doesn’t love a warm, comforting bowl of soup on a wet cold day?  There’s nothing better than the taste of chunky asparagus, wrapped in a cheesy soup mixture that is sure to soothe any hungry beast.

pastedGraphic_1.pngpastedGraphic_3.pngLife is starting to calm down for my family.  Still stressful but calming down none the less.  This weekend I spent cooking non-stop in my kitchen preparing for this upcoming week.  I am taking a road-trip to Oregon! Grants Pass or bust!  Since I will be gone for a week I needed to make sure that 1-my hubby would be fed; leftovers it is for him; and 2-y’all don’t miss out on anything from me!


With being on the road I needed to make sure that the things I made for Mr. Steve would be easy to reheat. With that of course soup came to mind!

Step 1

Gather all of your ingredients.

Step 2

Melt the butter in a large pot over medium heat. Add the onion and garlic, cook until tender, about 5 minutes.

Step 3

Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half and half until smooth. Add the chicken broth, bay leaves and nutmeg, then season with salt and pepper and bring to a simmer. Reduce the heat to medium-low and cook, uncovered, until thickened, about 20 minutes.

Step 4

Puree the ½ of the soup in a blender until smooth or use an Kitchenaid Hand Immersion BlenderpastedGraphic_1.png; return to the pot. Add the cheese to the soup and whisk over medium heat until melted. Enjoy!

Ingredients

  • 6 Tbsp butter
  • 1 white onion chopped
  • 1 tsp garlic minced
  • ¼ cup flour
  • 2 cups half and half
  • 3 cups chicken broth
  • 2 bay leaves
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ¼ tsp pepper
  • 4 cups chopped asparagus tips about 2 bunches
  • 2 cups 8 oz. grated white cheddar cheese
  • ½ cup 4 oz. grated asiago cheese

Instructions

  1. Melt the butter in a large pot over medium heat.Add the onion and garlic, cook until tender, about 5 minutes.
  2. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half and half until smooth.
  3. Add the chicken broth, bay leaves and nutmeg, then season with salt and pepper and bring to a simmer.
  4. Reduce the heat to medium-low and cook, uncovered, until thickened, about 20 minutes.
  5. Add the asparagus to the broth mixture and simmer until tender, about 20 minutes.
  6. Discard the bay leaves.
  7. Puree the ½ of the soup in a blender until smooth; return to the pot.
  8. Add the cheese to the soup and whisk over medium heat until melted.
  9. Add up to 3/4 cup water if the soup is too thick.
  10. Enjoy!

  • YUMMM this is the perfect hearty dish for a cool spring evening, I bet my husband would go crazy for it because he looooves asparagus. As I love cheesy soup, this is a match made in heaven 😛
