Who doesn’t love pasta? 

Is there such a thing as too many pasta recipes?

Yeah, I didn’t think so either. So, here is my recipe for Sausage & Chickpea Rigatoni Pasta!

I don’t know about y’all but for me I am slammed with life right now.  Literally, I have my head down and nose to the grind.  I am trying to get Miss Emma back into the swing of school, battling cooties and head colds right and left, trying to get through all the year-end accounting for the company I have only worked for a total of 6-weeks.  Seriously, I am talking W-2s, 1099s…of multiple varieties, filing oh lord the filing alone.  I’m exhausted. Happy, thriving (love me a challenge), but exhausted.

It is times like this that I find my good eating habits go out the window. I literally crave and cave into more and more to comfort food. Those rich, hearty dishes that fill you up with warmth from the inside out or creamy, sweet treats. I am not biased. I will take all the above.  BUT if I am being honest, pasta is my favorite comfort food.

Sometimes A Twist On Tradition Is  A Good Thing

This dish is a nice twist on the traditional rigatoni and meat sauce and happens to be one of my absolute favorite easy, filling and delicious family dinner recipes. Personally, I love rigatoni as opposed to spaghetti noodles.  Seriously, y’all think about it, it’s like a built-in spoon because it cradles the rich tomato sauce. It’s so good – it’s just delicious comfort food at its finest.

For this dish, I browned the sausage and then added the other ingredients to make a super quick tomato sauce. Then I combined all of the goodness with the cooked rigatoni and a with sprinkling of parmesan and mozzarella cheese topping.

In just under 30 minutes and dinner is served. Lovely served with crusty bread and a salad. What’s even better is like most pasta dishes, the leftovers are almost better than when it’s freshly cooked. So, make a big skillet, divide it into portions and enjoy it for lunch during the week or as a go-to dinner mid week.

Sausage & Chickpea Rigatoni Pasta

My Sausage & Chickpea Rigatoni Pasta brings you a hearty and delicious pasta that is a perfect family meal, packed with tons of flavor!

Ingredients

  • 16 oz. rigatoni pasta
  • 6 Italian Sausage links
  • 1 Tablespoon minced garlic
  • 1 red bell pepper chopped
  • 1 small white onion chopped
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 2 Tablespoons olive oil
  • 1 14 oz can chickpeas drained and rinsed
  • 1 14 oz can crushed tomatoes

Instructions

  1. Slice sausage into 1-inch rounds.
  2. Heat olive oil in a large skillet over medium-high heat, add sausage, onion, garlic and bell pepper. Cook for 3 minutes.
  3. Add chickpeas and cook for 3 more minutes.
  4. Add tomatoes and seasonings; stir and bring to a simmer; simmer for about 10-15 minutes while you cook the pasta.
  5. Meanwhile, bring water to a boil in a large saucepan and cook your pasta according to the package instructions.
  6. Drain pasta and add it to the sauce; toss to coat pasta.
  7. Serve with a sprinkle of parmesan and mozzarella cheese.
  8. Enjoy.

    I always have chickpeas in the cupboard. Paired with the sausage in this recipe…that really packs the protein up. Love the combination of flavours. A great dinner any night of the week.

  • Wow – it sure sounds like you have your hands FULL right now! Quick and comforting meals are so perfect at times like that, for sure. And I think I have to agree – pasta is probably my favorite comfort food, too! This recipe looks wonderful – and I love the addition of super healthy chickpeas, packed with fiber and protein – so good! Hang in there … and keep lots of pasta handy! 🙂

  • My 3 year old looooooves chickpeas, chicken sausage, and pasta, so you’ve basically provided me with his favorite meal! We’ll just have to swap out the rigatoni for spaghetti — while I agree with you that rigatoni is the perfect shape, he prefers noodles he can slurp. 😉
