These cornbread waffles have so many options for toppings! The best part is that you can easily adapt them to your family’s preferences or what you can find in your fridge tonight.

  • Drizzle of Honey or Syrup
  • Cooked Eggs – scrambled, sunny side up, poached, etc.
  • Chili – with onion and sour cream and cheese!
  • Fresh herbs like parsley, chives, green onions, or cilantro. Whatever you have on hand or sounds good to you!
  • Additional toppings – cooked bacon pieces would be amazing here, and sour cream would totally work, too!

How to Prep Savory Cornmeal Waffles Ahead


This savory waffle recipe is easy to prep ahead for busy nights. I suggest always making a double batch and freeze the leftovers.

  • You can make the batter up to 3 days ahead of time. Store in an air-tight container in the fridge.
  • You can also make the waffles ahead of time and store them in the freezer until you are ready to eat.

How do you freeze waffles?

Leftover waffles can be frozen for future use!

  1. Allow the waffles to completely cool.
  2. Place the waffles on a baking sheet lined with parchment paper.
  3. Place the baking sheet in the freezer for several hours, and then transfer to a freezer safe bag.
  4. Label the back with the recipe title and date and store for up to 3 months.

How do you reheat frozen waffles?

Homemade frozen waffles can be easily reheated. You can reheat waffles in a traditional oven preheated to 350. Place the waffles in a single layer on a baking sheet lined with parchment paper and cover with foil. Bake for 10-15 minutes or until heated through.

Frozen waffles can also be reheated in a toaster. Just place them in a slot like you would a piece of bread. You might need to rotate them and do 2 cycles before they are heated through all the way.

Ingredients

  • cup  all-purpose flour
  • cup  cornmeal
  • teaspoon  kosher salt
  • 1 1/2  tablespoons  baking powder
  • teaspoon  sugar
  • 1 2/3  cups  milk
  • eggs
  • 1/4  cup  butter melted

Instructions

  1. In a medium-size mixing bowl, whisk together the flour, cornmeal, salt, baking powder, and sugar.
  2. Stir in the milk and eggs.
  3. Add the butter and stir again.
  4. Pour onto the hot waffle iron and cook until lightly browned.
  5. Serve with chili, eggs, or with the syrup of your choice.
