Don’t you just love a meal you can throw together, slam it in the oven and Ta-Da,

dinner is done? Ya! Me too!

Sundays are my day for laundry, cleaning, cooking…but I spent most of the day dealing with Miss Emma and the emergency room.  Yep, of course on Sunday when the doctor isn’t open Emma comes down with strep throat…huge white spots on her throat, fever, chills – the works! Then at about 4:00 PM the snow hit and I have nothing for dinner.


I literally walked over and opened the fridge… and closed…opened and closed it again. 20 minutes later I was still opening and closing it. Other than the the cold air hitting my face with every close, nothing magically appeared; which didn’t really make my situation any better: I literally had no idea what to make for dinner that night.

Holy crap…shocking, I know!

But the truth is… When you have your son couch surfing, you’re teenager had a friend sleepover, your is in Ireland and has been for two weeks, your trying to maintain life on a hour by hour basis, you occasionally lose touch with reality and find yourself exhausted which adds to a lack of dinner inspiration. 

Now of course, I could have ordered pizza (full disclosure: they would be all over that). But truthfully, that thought didn’t even occur to me.  Plus after working hard all day topped with being hypoglycemic, I need nutritious food more than ever.

Now I don’t know about y’all but it can be downright hard to stay inspired with healthy choices during the winter months.

So I decided to go for brussels sprouts, yellow sweet potatoes, some sliced apples and chicken.

Hints and Tips to make this dinner a success:

Make sure to cut the vegetables in correlation to their respective cooking time.

I mean, cut them so they’ll cook evenly

*You can leave the sweet potatoes on the chunkier side, because they cook quite fast when cut. 

*The sprouts need to be cut into at least halves and larger ones quartered.

The apple cooks the fastest so don’t peel the apples. The chances of them ruining your dinner by turning into a pile of mushy sadness are too big.

For the chicken you’ll make a seasoned honey  glaze and leave it to marinate while chopping the veg. 

This dinner is 1) easy, 2) delicious and filling, and 3) healthy in a number of ways. What more could you ask for?

Ingredients

  • 1/4 cup Balsamic vinegar
  • 1/4 cup honey
  • 2 Tablespoons olive oil
  • 2 teaspoons Dijon mustard
  • 1 clove garlic minced
  • 3/4 teaspoons kosher salt
  • 1/4 teaspoons crushed red pepper flakes
  • 1 1/4 pound boneless skinless chicken breasts cut into cubes
  • 1 pound sweet potatoes peeled and cubed, about 4 cups
  • 10 ounces Brussel sprouts, trimmed and halved lengthwise
  • 1 cup chopped onion

Instructions

  1. Preheat oven to 425F. Line a large baking sheet with foil.
  2. In small bowl whisk vinegar, honey, olive oil, Dijon, garlic, kosher salt and red pepper flakes until blended.
  3. Place chicken in another bowl and add 3 Tbs. balsamic mixture, tossing until chicken is coated; let stand.
  4. In another bowl combine sweet potatoes, Brussel sprouts and onion and toss with remaining balsamic mixture until evenly coated.
  5. Arrange chicken in center of baking sheet. Arrange potato mixture on either side of chicken.
  6. Roast 40 minutes or until chicken is cooked through and potatoes and vegetables are tender.
  7. Transfer to serving platter and drizzle any pan juices over chicken, potatoes and vegetables
