London Broil is one of those easy dinners that I often forget about.  Trying to eat healthy I try to avoid eating a lot of red meat but who am I kidding? Every now and then we gotta have it to satisfy those taste buds and it is oh so good!  Top that off with the fact that making this Sheet Pan London Broil dinner is quick, easy and all in one dish and y’all have a classic case of perfection!

London Broil easily could be a part of your regular dinner rotation. It’s an inexpensive cut of meat that can feed a large family (or a small family a few times) and it’s super easy to cook.

So, our local supermarket had a special on London Broil cuts. And with a  buy one, get one free offer, I seriously couldn’t pass up the sale.  For real, I bought enough to freeze for later.

This top round cut of beef is the best of both worlds. It comes in small 2-3 pound cuts and the leftovers are excellent for sandwiches! So, for a small family like mine, this one London broil can make multiple meals with very little effort. Or for a large family it can feed the entire group without leaving anyone hungry!

This Sheet Pan London Broil with Potatoes and Asparagus is great because you don’t have to remember to marinade hours or a day before cooking. Simply toss some potatoes in seasoning, place them in the oven to roast, while roasting marinate the meat and then bake it over the potatoes and asparagus using an oven safe baking rack. The result is a complete delicious dinner in just under 30-40 minutes.

Ingredients

  • 2 lb London Broil
  • ¼ cup + 4 Tbsp olive oil divided
  • 2 Tbsp balsamic vinegar
  • 2 heaping Tbsp minced garlic
  • 1 Tbsp dried rosemary
  • ¾ tsp + 1/8 tsp salt divided
  • ¾ tsp + 1/8 tsp black pepper divided
  • 1 pound baby Yukon gold potatoes halved
  • 2 bunches of asparagus trimmed

Instructions

  1. Preheat oven to 450°. Line a large rimmed baking sheet with foil or coat with non-stick spray.
  2. Place the steak in a large zipper top bag with the ¼ cup olive oil, balsamic vinegar, minced garlic, ½ tsp salt, and ½ tsp pepper. Turn to coat and let marinate while roasting potatoes.
  3. In a large bowl, place potatoes, 2 Tbsp olive oil, ¼ tsp salt, ¼ tsp pepper; toss gently to coat and spread them out evenly on the baking sheet.
  4. Roast potatoes mixture until they begin to brown around the edges, about 20 minutes.
  5. Combine remaining 2 Tbsp olive oil, asparagus and remaining salt and pepper and toss to coat; place on the baking sheet along with the potatoes.
  6. Place an ovenproof wire rack over the asparagus and potatoes.
  7. Remove the London broil from the zip top bag and shake of the excess marinade; lay the steak on the rack.
  8. Return the baking sheet to the oven and roast until an instant-read thermometer inserted horizontally into center of meat registers 130°, about 10 minutes.
  9. Remove from the oven and let rest for 5 minutes before slicing.
  10. Enjoy!
