Weeknights can get busy!  With after school and work activities, homework, getting ready for the next day and normal household chores – the day is over before you know it! Top that off with moving to a new city….everything packed in boxes and yeah…you get it! No time!


Tonight I found myself standing in front of a nearly empty fridge, thinking “I need dinner, like, now… what to make?” Then I went to our nearly empty pantry….I literally cursed at myself for not having meal planned this week. Like serious I didn’t even think about meal planning.i am totally focused on our move….needless to say this week is going to be tough with everything packed and no plan in place.  BUT!  I managed to whipped something up that my family thought was delicious. A rope of smoked sausage, onion, garlic, some veggies, leftover rice and cheese. DONE. BAM – ROCKSTAR STATUS!

This kind of dinner is so versatile, and easily adaptable to what you already have on hand. Got asparagus, and some peas? Use those. Got some brown rice, or quinoa leftover? Use that. Don’t like smoked sausage? Some leftover steak or chicken, or even some shrimp from the freezer will work deliciously. You make it with what you have and what you like!

Ingredients

  • 1 Tablespoon olive oil
  • 1 Tablespoon butter
  • 1 pound Hillshire Farms Smoked Sausage sliced ¼-inch thick
  • 2 cups broccoli florets
  • cups cooked brown rice - I use minute rice to save time!
  • 1 teaspoon garlic powder
  • 1 teaspoon onion salt
  • ¼ teaspoon pepper
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat a large skillet over medium-high heat. Add butter and olive oil until melted.
  2. Add the sliced smoked sausage and cook for about 5 minutes until sausage begins to brown.
  3. Add the broccoli and cover. Reduce heat to low and cook about 5 minutes more - stirring occasionally.
  4. Add the cooked rice, garlic powder and onion salt to the skillet.
  5. Stir well.
  6. Add the shredded cheese - stirring well until the cheese is melted.
  7. Remove from the heat and serve warm.
