I’m seriously loving this southern style creamed corn recipe. I have always loved it and my family is in that same boat. Miss Emma insists on having seconds and all of the leftovers for herself. It is SO good!

Creamed corn was one of those things that I really never thought of making myself. I have always tried to make sure that my family got fresh greens and veggies with dinner. Plus, it always came from a can and if it tasted great that way, why make it at home? Honestly, if you’re just starting cooking dinner for your family, there’s nothing wrong with creamed corn from the can. Sometimes opening a can is all a mom or dad has time to do. I’ve been there, multiple times!  But, I do have to warn you, if you make this recipe, there is no turning back.

Ingredients

  • 8 ears corn husked
  • 2 tablespoons sugar
  • 1 tablespoons all-purpose flour
  • Salt and freshly ground black pepper
  • 1 cup heavy cream
  • 1/2 cup cold water
  • 2 tablespoons bacon grease
  • 1 tablespoons butter

Instructions

  1. In a large bowl, cut the tip off cob. Cut the kernels from cob with a small paring knife. Using the back of the blade, scrape against the cob to press out the milky liquid.
  2. Whisk together sugar, flour, and salt and pepper, to taste. Combine with corn. Add the heavy cream and water. Mix.
  3. In a large skillet over medium heat, heat bacon grease. Add corn mixture and turn heat down to medium-low, stirring until it becomes creamy, about 30 minutes.
  4. Add the butter right before serving.
