Who doesn’t love a delicious take on breakfast?

Cheddar and Bacon are the latest cheesy waffle deliciousness to hit my kitchen table. My family loves having breakfast for dinner. It’s a nice change and is always a hit around the dinner table. Plus I personally enjoy that it seems easier and faster to get on the table and into those empty bellies after a hectic day. Easy is a welcome thing in my book!

Cheese adds so much flavor to waffles and I’ll let you in on a little tip. Store-bought pre-shredded cheese is my choice for these savory waffles. Pre-shredded cheese results in a more cheesy bite and requires far less cheese in the recipe to accomplish that. Which leaves you with a lighter, fluffier, crispier waffle that still delivers plenty of cheese flavor.

Back to the waffles.

It’s the middle of October so you might be asking why I’m sharing these today? Well if you are hosting family for the upcoming holidays, what is a better way to impress them then making some delicious waffles for breakfast/brunch? Believe me, your family will want to come back every year if you bring these bacon waffles out.

These waffles are fantastic. The little chunks of bacon mixed with syrup, melted cheese and bit of egg and yolk blend to give you a sweet and savory flavor explosion! So, give your weekend waffles a make-over by adding some savory bacon and cheddar cheese. Drizzled with maple syrup and topped with a fried egg, these savory waffles are sure to be a new favorite!

Ingredients

  • 1 package bacon strips
  • 1 cup flour
  • ¼ tsp baking soda
  • 1 ¼ tsp baking powder
  • ½ tsp salt plus more for seasoning
  • ¼ tsp black pepper plus extra cooking
  • 9 eggs
  • 1 cup buttermilk
  • 3 Tbsp melted butter
  • 1 cup grated sharp Cheddar

Instructions

  1. Cook bacon in large skillet over medium-high heat until crisp and brown, 8 minutes. Transfer to a paper towel-lined plate to let drain, then chop.
  2. In a small bowl, whisk together flour, baking soda, baking powder, salt, and pepper.
  3. In a medium bowl, whisk together 1 egg, buttermilk, and 1 tablespoon melted butter.
  4. Add dry ingredients to wet ingredients, whisking until smooth.
  5. Add 1 cup bacon and ¾ cup cheddar cheese.
  6. Heat a waffle maker and coat with non-stick spray.
  7. Cook waffles in batches until golden.
  8. Heat skillet coated with non-stick spray over medium-high heat; cook remaining eggs until whites are set and yolks are still soft.
  9. Serve waffles with two eggs on top and garnish salt, pepper, a sprinkle of remaining bacon and cheese.
