I have to admit I first got this recipe off of a television show and for the life of me I cannot remember which one. BUT I have been making this dish since at least 2012 if not longer because let’s face it, breakfast foods are my FAVORITE!!  Now I don’t know about you but often, I feel like we don’t have the time in the morning to make much less enjoy all the delicious breakfast recipes, but thankfully in my house, we have them for dinner quite often.

Everything about this egg breakfast is phenomenal! First off, it’s nestled in an avocado! Then topped with BACON! And CHEESE! Enough said! What’s not to love!? I like to serve it with some homemade salsa for an extra punch of flavor!

Bacon Eggs & Tomato Baked Breakfast Avocados

Gluten free · Avocado Eggs with Bacon & Cheese are a quick and easy meal for any time of the day! Being low in carbs and big on flavor, you can't resist them!

Ingredients

  • 3 large avocados
  • 6 eggs
  • 4 strips of bacon diced and cooked till crispy
  • 2 Roma tomatoes chopped
  • 1/2 cup shredded cheese I used Monterey Jack

Instructions

  1. Preheat oven to 425°F.
  2. Spray a muffin pan or glass baking pan with cooking spray.
  3. Cut avocados in half and scoop about an additional 1-2 tablespoons out of the avocado to create a well for the eggs.
  4. Place avocados flesh side up on prepared muffin pan or glass pan.
  5. Gently crack one egg in each avocado well, making sure to keep the yoke intact.
  6. Top with crumbled bacon, chopped tomatoes and a sprinkle of cheese.
  7. Bake for 15-18 minutes, or until eggs are desired temperature. Remove.
  8. Serve with a side of fresh salsa.
