I made this Chipotle Chicken Flatbread Pizza for lunch last Sunday. Actually, I made three (yes, 3) of them.  I planned on having leftovers for lunch the next day, I really did, but as it turned out that was NOT the case! For some reason, somehow, these pizzas did not last that long.

It’s the thought that counts for something right?? Once again, so much for my plan!

But truly it doesn’t matter. This pizza is so easy that I can always whip it up for lunch another time since it only took thirty minutes start to finish.

It’s DELICIOUS.

So, to get an great easy dinner to your table quickly, I bring you my Chipotle Chicken Flatbread Pizza.  In 30 minutes, y’all will have an easy crescent crust topped with chili-rubbed chicken, four cheeses, fresh pico de gallo and all the southwest chipotle flavors you could want!

Chipotle Chicken Flatbread Pizza

Ingredients

Chipotle Pesto

  • ½ cup olive oil
  • 1/3 cup grated parmesan cheese
  • ¼ cup pine nuts
  • 3 Tbsp Pureed Canned chipotle peppers
  • 1 Tbsp white vinegar
  • 1 Tbsp minced garlic
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp dried basil

Pico de Gallo:

  • ½ cup diced roma tomato
  • 2 Tbsp diced red onion
  • 1 Tbsp diced jalapeno
  • ½ tsp lime juice
  • 1/8 tsp salt

Pizza:

  • 1 tube crescent rolls
  • 1 boneless skinless chicken breast cut into 1-inch pieces
  • 2 tsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp chili powder
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 2/3 cup Monterey Jack cheese
  • 2/3 cup cheddar cheese
  • 2/3 cup feta cheese
  • 2 Tbsp grated Parmesan cheese
  • 2 tsp chopped cilantro
  • 1 avocado pitted, peeled and sliced

Instructions

  1. Make the chipotle pesto by combining all the ingredients in a blender and blending on high for 15-20 seconds or until the nuts are ground up; set aside.
  2. Make the pico de gallo by combining all the ingredients in a small bowl; set aside.
  3. Preheat oven to 375°F.
  4. Roll out the crescent rolls and divide in half to form 2 squares; pinch the seams together.
  5. Carefully place the two squares on parchment paper on a baking sheet. Brush the top of the dough with olive oil; bake for 6-8 minutes or until the top is just beginning to brown.
  6. Remove from oven and let cool for a few minutes while you cook the chicken.
  7. In a skillet over high heat, heat 2 tsp olive oil and cook the chicken, ¼ tsp salt, ¼ tsp pepper, ¼ tsp chili powder, 1/8 tsp garlic powder and 1/8 tsp onion powder; stirring and tossing frequently cook until chicken is cooked through.
  8. Combine the cheddar, Monterey and feta cheeses and sprinkle the cheese over the doughs.
  9. Divide the chicken and arrange the pieces over the dough; bake for 10-12 minutes.
  10. When the flatbreads come out of the oven, sprinkle each one with 1 tsp parmesan cheese.
  11. Drizzle the chipotle pesto over the top pf each one and sprinkle the pico de gallo over the pizzas followed by cilantro and avocado.
  12. Slice the pizzas diagonally making four triangular pieces out of each pizza.
  13. Serve.
