Fresh Off The Farm…..Kinda!

Yesterday felt like spring had sprung. Today however, was a different story. We had thunder, lightning, hail; it was cold and windy; just miserable. Having said that I decided today would be spent indoors, next to a warm oven. I made rice krispie treats, peanut butter rice krispie treats, cream cheese and apple danishes….and Farm Fresh Strawberry Muffins. Oh my goodness I am positive I gained at least 10 pounds today. All I can say is that my husband’s co-workers are getting treats tomorrow! Get them out of my house before I eat every last one of them.

I love strawberry muffins; they’re like blueberry but better! They can be made with fresh or frozen strawberries and with the hint of cinnamon they bring a smile to all faces. So, for Valentine’s Day make some sweets for your sweeties!

Farm Fresh Strawberry Muffins

For the Muffins:

  • 3 cups flour
  • tsp baking powder
  • ¼ tsp baking soda
  • ¾ tsp salt
  • ½ tsp cinnamon
  • 10 Tbsp butter room temperature
  • 1 cup sugar
  • 2 eggs
  • ¾ cup milk
  • ¼ cup buttermilk
  • 2 tsp vanilla
  • cup strawberries diced

For the Glaze:

  • cup powdered sugar
  • ¼ cup finely chopped strawberries
  • 3 Tbsp milk
  • 1 Tbsp strawberry jam
  • ¼ tsp vanilla


  1. Preheat oven to 400°F and line muffin tins with 18 paper liners or grease with cooking spray.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. Combine the milk, buttermilk, and vanilla together; set aside.
  4. In a large mixing bowl or the bowl of a standing mixer, cream butter and sugar until light and fluffy (about 1 minute).
  5. Add one egg at a time, mixing thoroughly after each.
  6. Alternate between adding the flour mixture and milk mixture in 3 batches to the creamed butter mixture. Mix after each addition until almost combined.
  7. Gently fold in the strawberries.
  8. Spoon batter into 18 muffin cups (about ⅓ cup).
  9. Bake for 17-20 minutes until toothpick comes out clean.
  10. Immediately remove muffins from tin onto a cooling rack; cool for 10-15 minutes before applying glaze.
  11. For the Glaze:
  12. Whisk all glaze ingredients together and then dip muffin tops in; be sure to rotate and twirl the muffin for and even coating.
  13. Enjoy immediately or allow to cool completely for glaze to dry.
