This has been the shortest week and the longest week ever. The week flew by because I was so busy, but at the same time it felt like it was dragging and never going to end because I was so busy. I feel like i have gotten some much done and yet nothing done all at the same time. Does that even make sense? Maybe this week was all just a blur for me.

Well, yesterday I made a big pot of Green Chili Black Bean Corn Chowder and I knew I needed something that would complement it to go along with it. Knowing how much my family loves cornbread I decided to make a batch with a little bonus. I added green chili and cheddar cheese to my favorite recipe and it was the perfect side to our chowder.  It totally did the job of warming us up on this snowy winter day!

Green Chili Cornbread

Green Chili Cornbread – an easy homemade cornbread infused with green chilies and cheddar cheese that goes great with a bowl of chili or soup.
Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes

Ingredients

  • 1 cup Bisquick mix
  • 1 cup cornmeal
  • 2 Tbsp sugar
  • ½ tsp salt
  • 1 cup milk
  • ¼ cup vegetable oil
  • 2 eggs
  • 1 cup shredded sharp cheddar cheese
  • 2/3 cup corn thawed and drained
  • 1 4 oz. can diced green chilies

Instructions

  1. Heat oven to 400°F.
  2. Spray bottom of 9-inch square pan with cooking spray.
  3. Stir Bisquick mix, cornmeal, sugar, salt, milk, oil and eggs in medium bowl just until moistened.
  4. Gently fold in remaining ingredients.
  5. Pour into pan and bake 28 to 32 minutes or until light brown.
  6. Serve warm.
