Mac salad when you can’t be in Hawaii

Here in Flagstaff we have a restaurant called ‘Aloha Hawaiian BBQ’. My husband loves the place. They serve inexpensive, quality fast food; perfect for the local college kids, that’s also why they are always busy. Everything we had there was delicious and seriously the most authentic Hawaiian food I have had since vacationing in Hawaii. The macaroni salad, especially, hit home and suddenly made me wonder why I haven’t posted a Hawaiian macaroni salad recipe.

In hopes to make my hubby a happy man (and giving me another recipe to post), I made my version of Hawaiian Macaroni Salad. I am happy to report that I got 2-thumbs up

Keep it simple

Authentic Hawaiian Mac Salad is ridiculously simple. It is a simple mac salad yet, it is so creamy and flavorful. True Hawaiian macaroni salad is pretty much just macaroni, carrot, mayonnaise and salt and pepper. There are a few other ingredients you can add like celery, extra onion, potatoes, fresh crab, or relish, but the basic recipe is my favorite.

Hawaiian Macaroni Salad

This Hawaiian Macaroni Salad is the real deal. A simple, creamy macaroni salad that makes for an incredible side dish to any BBQ, Luau or summer time meal!

Ingredients

  • 1 lb elbow macaroni
  • ½ cup apple cider vinegar
  • 2 cups mayonnaise divided
  • 2 cups milk divided
  • 2 Tbsp brown sugar
  • tsp salt
  • 3 tsp ground black pepper
  • 1 bunch scallions sliced thin (about 5-7 scallions)
  • cups shredded carrot
  • cups minced celery

Instructions

  1. Bring a large pot of salted water to a rolling boil; add macaroni and cook until very soft, 10 to 12 minutes.
  2. Drain, return the pasta to the pot and immediately toss with vinegar.
  3. Let cool ten minutes.
  4. While cooling pasta, in a large bowl, whisk together 1 cup of the mayonnaise, 1½ cups of the milk, the brown sugar, salt and pepper.
  5. Once the macaroni has cooled for 10 minutes, toss with the mixed sauce; fold in the scallion, carrot, and celery, cover and refrigerate for 15 minutes.
  6. Whisk together the remaining 1 cup mayonnaise and ½ cup milk and pour over macaroni salad; toss well to coat.
  7. Taste and add more salt or pepper as needed.
  8. Chill in the refrigerator until cold.
