I am a bad mom!

Yep, I am embracing the fact that I am a bad mom. Ha ha! Oh my goodness y’all, I spent the day watching the movie “Bad Moms”.  I thoroughly enjoyed that movie.  It always brings me smiles, laughter, agreement, acknowledgement and so much more.  Believe it or not I know moms who are just like those in the movie and don’t even get me started on my son’s grade school PTO, which I endearingly dubbed the “PTO Posse”.   If you haven’t seen the movie y’all need to and it should all make sense. Oh my goodness it was funny!

Nacho cheese sauce, this is where the nacho cheese come from.  In the movie one of the characters makes nachos and almost instantly I wanted some!  Sometime as a food blogger I am so focused on my next creation that I forget about the basics that I know, trust and love!  Let me tell y’all, there is nothing better than a heap of tortilla chips topped with seasoned beef, re-fried beans, tomatoes, olives, green onions and CHEESE…ooey, gooey, liquidy (but not Velveeta) cheese!

Homemade Nacho Cheese Sauce

Homemade Nacho Cheese Sauce is made with real, simple ingredients and is perfect for all your finger foods ideas.

Ingredients

  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 cup milk
  • ¼ tsp salt
  • 8 oz block sharp cheddar cheese grated

Instructions

  1. Melt the butter in a medium size skillet over medium heat; add the flour and whisk until it combines into a smooth paste and starts to bubble around the edges.
  2. Add the milk to the skillet and continue whisking.
  3. Once combined, turn the heat to high and bring to a boil; once boiling, quickly lower the heat and reduce to a simmer.
  4. Allow the sauce to thicken slightly.
  5. Add the salt and whisk to combine.
  6. Add the cheese and gently stir, allowing the cheese to melt, continue stirring until cheese is melted and smooth in consistency.
  7. Serve - Enjoy immediately, as the sauce will get firm as it sits.
