Does Food Ever Remind You Of Family?

This morning I woke up missing my son. His birthday is this upcoming Sunday and as y’all know my son, Christopher, moved to Oregon a couple of years ago and he has no intention of coming back to Arizona. Let me say I am okay with that for now; and when I say for now it’s the truth, for now. Once he finds “the one” and has my grandbabies…the for now will change into heck no, we are moving! I won’t be and can’t be far from him once babies are involved. Heck as it is now I can’t go more than a month or two without going there to see my boy. But so far I don’t have to worry. He might found the one but currently has no intention of having babies any time soon.

Anyhow, when Chris was little he loved peanut butter banana sandwiches. So, when I woke up this morning missing him my mind started to wander down memory lane. Chris was such a great kid, now he is an amazing young man. Anyhow, his childhood love inspired me to turn the easy yummy sandwich into a bite size snack, cookies! Imagine banana bread mixed with peanut butter cookies – awesome!

Peanut Butter Banana Cookies

It’s like a peanut butter and banana sandwich rolled into the goodness of a cookie.

Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • ½ tsp cornstarch
  • ½ tsp salt
  • ¼ tsp baking soda
  • ¼ tsp ground cinnamon
  • ½ cup butter softened
  • ½ cup brown sugar packed
  • ½ cup creamy peanut butter
  • 1 egg
  • ½ cup mashed banana
  • 1 tsp vanilla extract

Instructions

  1. Heat oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, whisk the flour, baking powder, cornstarch, salt, baking soda and cinnamon until combined; set aside.
  3. In the (separatbowl of a stand mixer, cream the butter and brown sugar together on medium-high speed until light and fluffy, about 1 minute.
  4. Add peanut butter, egg, banana, and vanilla, and continue mixing on medium speed until combined, scraping down the sides of the bowl once if needed.
  5. Fold in the dry ingredients and mix until just combined.
  6. Measure out a rounded tablespoon-full of dough, roll it into a ball, then place on the baking sheet.
  7. Use a fork to press down the top of the ball and make a crisscross pattern.
  8. Repeat with remaining dough.
  9. Bake for 8-10 minutes or until slightly golden around the edges.
  10. Cool for 1-2 minutes on baking sheet, then transfer to a wire rack to cool completely.
  11. Serve immediately or store in a sealed container for up to 1 week.
