Are you ready from some popsicles?

With the temperature rising, school graduations over and summer vacation in full effect, popsicles are a must! They are the perfect little snack that I can grab and go – no, literally, two weeks into summer and I am hiding in my greenhouse eating a Pineapple Whip Popsicle. It is the only place that my dogs can’t go and Miss Emma won’t go! It’s that or I am going to kill them….but y’all jail might not be so bad….no kids, three square meals a day….kidding!

Seriously though, y’all know what I mean don’t ya? Personally, I just love finding wet swimsuits and towels left on the floor in a heap; and not always in the bathroom! Half full glasses of god knows what, that won’t be finished or even touched for that matter, again.  The constant snacking which completely voids any and all meal times. And the blankets and pillows! Why on earth should they stay on our beds when they can so easily be left on the couch? Seriously, mom, why can’t I watch Hulu on my iPad in the living room, hogging up the whole couch, while your try to film a video for your blog? Pish!

Oh, and the friends! I know that Miss Emma is “bored out of her mind” so of course I can accommodate all her social needs. Friends are our life, right?  With no notice, please let me drive to To-Cum-Carry and back since no other mother can drive…at least that’s gotta be the case because it seems I am the only person with a car and license. And of course, we can stop and get Mc Donald’s for ALL of YOU!  I mean it’s not like I am a food blogger who experiments with food for a living and we have no food in the house!

Insert the 16-year-old eye roll and a sarcastically whispered “whatever” here.

Then just for kicks and giggles, add in the stuffing that has become the newest décor in my living room. I like to call it “innards of a stuffed lion”. It’s quite the rage! So, Mr. Tanner loves stuffed animal toys.  My Airedale is the coolest! He loves his toys, treasures them, sleeps with them and pinch-ey bites them. BUT Mr. Spock (yes Spock like Star Trek – My hubby is a nerd what can I say?), is a vicious killer. After all, you never know when that stuffed animal, sock, shoe, pillow, whatever suits his mood, might attack us. Seek and Destroy!!! That is Mr. Spock’s motto and let me tell y’all he is living it to its fullest!

So, here I sit in my greenhouse eating a popsicle. A delicious Pineapple Whip Popsicle. My sanity has returned and so has my mothering skills.  I am instituting the “I’m Bored” jar and a “Daily Chore Chart”. After all, what are kids for???  Free day labor!

Pineapple Whip Popsicles

  • 1 can Dole® Crushed Pineapple undrained
  • 10 ounces heavy cream
  • 2 Tablespoons Lime Juice
  • 1/4 cup Orange Juice
  • 1/3 cup Sugar


  1. In a mixing bowl, add 1/2 can of crushed pineapple, heavy cream, lime juice, orange juice and sugar. Blend together with an emulsion hand mixer for one minute. Stir in remaining pineapple.

  2. Fill popsicle molds 3/4 full. Place lid on and insert popsicle sticks. Freeze for 8 hours or overnight.

  3. To remove popsicles, run warm water over the mold.
