Southern Creamed Corn
Southern Creamed Corn is a slow-cooked sweet corn turned into the perfect, soon to be your favorite, summertime side dish.
Everyone grills? But do you have a favorite side dish?
So, the other night we decided to grill some steaks for dinner, gotta love a good rib-eye and that my hubby does the grilling, but I am in charge of the side dishes. Right now corn on the cob is on sale so I had several ears in the fridge but I also know that I am kinda bored with just corn on the cob. Then it hit me…Southern Creamed Corn. It’s a change for us and we haven’t had it in ages, plus it’s a family favorite; and out came the crock pot! That’s right y’all, the crock pot; aka slow cooker; aka my new best friend. I simply throw everything in, give it a stir and several hours later we’ve got GOLD!

So that’s what I did, everything went into the crock pot and we went on about our day. Finally, it was time to throw the steaks on the grill. Now let me tell you when this corn cooks it smells amazing and because of this said aroma my Miss Emma has been driving me nuts all day – When’s the corn gonna be done? Is it ready yet? How much longer? Oh my goodness she need to stop. Anyhow, the steaks are finally on the grill which my husband is manning; I’m outside making Tanner (our poopy puppy) go potty and keeping the hubby company / keeping from pestered from said Miss Emma when all of a sudden my kiddo slyly walks out holding a piece of ice on her tongue. Steve and I both look at her and in unison ask ‘What did you do?’ Emma looks at us, tongue sticking out, ice cube in hand held to her tongue and says ‘I couldn’t wait any longer and I didn’t think it would be that hot….I had to taste the corn….and I burnt my tongue’

Southern Creamed Corn
- 8-9 ears of fresh sweet corn or 8 cups of frozen sweet corn kernels
- 2 tsp salt
- 2 tsp sugar
- 1 ½ cup heavy cream
- ½ cup water
- 8 Tbsp 1 stick of butter
- 2 pkgs 8 oz each of cream cheese, cut into small pieces
- Black pepper to taste
Using a serrated edge knife, cut corn away from cob and add to crock pot.
Add remaining ingredients and stir to combine.
Cook on low 4 – 6 hours.
When done, stir and serve with some fresh ground pepper.
