Who’s ready for summer?

Spring is unofficially upon us and it’s time to gather family together in the warm, relentless sunlight and celebrate with good food and good company.

Summer and Spring time in Arizona is a hot one! For my house that means we have as many cool dishes as my brain can think of and of course this always includes many varieties of fresh, ripe berries. They are so versatile in recipes that you seriously can’t go wrong. Berries make a beautiful addition to summer beverages from lemonade to iced tea and from sangria to smoothies. They are also fabulous on top of a crisp green salad, like this summer seasonal salad.

Who’s got berries?

If you love fresh berries, I’ve sure got one fantastic way for you to enjoy them with this Summer’s Perfect Seasonal Salad. The salad starts with a bed of fresh greens. You can really use any type of lettuce you like. I like to mix several different kinds or use a bag of mixed greens. Load the salad with fresh berries, candied pecans and a sprinkle of blue cheese, if you like.

I just love the fresh berries combined with the salty blue cheese and the tangy and sweet dressing. Also, any salad that has candied pecans in it is always going to be a winner, right?!

Candied nuts, also called caramelized nuts, are one of my favorite toppings on a homemade salad. If you don’t like pecans, you can substitute another type of nut or leave them out entirely.

My recipe for candied pecans includes a quick stovetop version that is great for using with salads, or an even tastier baked version. I have also found them at the grocery store in the bulk bin area, whatever works best for you!

The salad dressing is really simple, and perfectly sweet, and you can adjust it easily to fit your preferred taste. Homemade salad dressings like this will keep well in the fridge for about 2 weeks, so feel free to make the dressing in advance!

This salad is absolutely delicious, and it looks just as incredible as it tastes.

Summer’s Perfect Seasonal Salad

Ingredients

Salad

  • 10 cups mixed greens lettuce red lettuce, romaine, spinach, or whatever you like
  • 1 cup fresh strawberries sliced
  • 1 cup fresh blueberries
  • 1 cup candied pecans
  • 1/3-1/2 cup blue cheese crumbles depends on your preference
  • Grilled chicken strips or salmon strips

Raspberry Vinaigrette Dressing

  • 1 cup raspberries preferably frozen
  • 1/4 cup lemon juice
  • 1/4 cup white wine vinegar
  • 2 tablespoons olive oil or walnut oil
  • 2-3 tablespoons honey or date syrup for vegan option
  • 1/8 teaspoon sea salt optional

Instructions

  1. Add all of the dressing ingredients to a blender and blend until smooth.
  2. Store dressing in the fridge for up to 2 weeks.
  3. Make candied pecans.
  4. Prepare, wash and dry berries.
  5. Add greens to a large mixing bowl.
  6. Add toppings (I like to set aside a spoonful of each topping to add at the end, for aesthetics.)
  7. Toss the mixture in desired amount of dressing.
  8. Top with grilled chicken strips or some grilled salmon.
  9. Serve immediately.
